Dear friends,

A few weeks ago we launched a petition in support of Joe Schneider, the producer of the Stichelton Presidium in England, who makes an excellent cheese that is effectively identical to Stilton, using raw milk from his own cows. The Stilton PDO specifications require that the milk be pasteurized, which is why Joe is forced to call his cheese Stichelton.

Slow Food is supporting his fight to have the PDO rules changed.

In a short time we collected 4,800 signatures, but we want to get many more before we present an official letter to the Ministry and the consortium of Stilton producers in support of Joe’s request.
